Apricots
The Apricot
is a relative of the Almond and the Peach. The Apricot is a
buttery sweet, intensely flavored fruit. Buy plump, firm, but
not hard apricots. Depending on the variety, ripe apricots are
pale yellow to burnt orange. Ripen at room temperature, once
ripe you can store in a refrigerator for up to 3 days.
