Artichokes
Choose a deep-green heavy artichoke with leaves that squeak when pressed together. Rinse thoroughly, cut off the stem near the base, then cut off the top quarter of the artichokes. Place in a pot with 1 inch of water stem-side up. Steam for 30-40 minutes.
