Clementine
Oranges
These little
oranges are very sweet, easy to peel and they're in season!
They are also seedless. Great for school lunch, after school
snack or in a healthy salad. A great source of vitamin C and
low in calories. |

Clementine Spinach |

Pkgs. Fresh Spinach (10 oz. each)
1/3 c. Chicken or Vegetable Broth
1 T. Low-Sodium Soy Sauce
1/2 t. Sugar

Clementines, peeled and cut into bite-size pieces
1 T. Toasted Sesame Seeds
|
Remove
stem and wash spinach. In a large saucepot, place spinach
in 1/4 cup water. Stirring occasionally, cook covered
over medium-high heat for 4 to 5 minutes until leaves
are just wilted; drain well. In same saucepot, combine
chicken broth, soy sauce, and sugar; bring to a boil.
Stir in spinach and clementine pieces and heat. Serve
in individual bowls; sprinkle with the sesame seeds. Serve
with additional soy sauce if desired. Makes 6 servings.
